NUTRISCORE EURECAT

Development and classification of new healthier food products According to the level of nutritional labelling Nutriscore.

The NUTRISCORE project aims to improve the nutritional classification of meat derivatives defined by the participating companies to achieve a better position with respect to competing products in the consumer. For this, it will be based on the development of ingredient formulation strategies and adaptations of the manufacturing processes of the SAME ones.

The main objectives of the project are:

  • Diagnosis of the current situation of meat derivatives according to the visual nutritional classification system Nutriscore.
  • Identification of opportunities to incorporate new ingredients in the formulation of products.
  • Development of formulation and process strategies for the improvement of nutritional labeling.

Currently, the voluntary frontal visual nutritional labelling systems and, mainly, the Nutriscore, have proven to be an element with a strong capacity to influence the purchase decision of consumers and, therefore, France, Belgium, Spain and Germany have announced its willingness to publish regulations that regulate its use for companies. These countries have an important market and political weight within the EU and, this, increases the probability that, in the near future, frontal visual nutrition labelling will be mandatory and unified within the EU.

Eurecat’s Nutrition and Health Unit participates in the project, taking charge of activities such as diagnosing the current situation of meat derivatives produced by participating companies according to the Nutriscore visual nutritional classification system, identifying opportunities to incorporate new ingredients in the formulation of the meat derivatives of interest, the development of formulation and process strategies to improve the nutritional labelling of meat derivatives and the development of analogues.

The project, which is currently in execution, is coordinated by the the Catalan Association of innovation in the pig meat industry (INNOVACC) and also has the collaboration of the Institute of Agrifood Research and Technology (IRTA).
