EKOFERM EURECAT

Development of innovative and of high-functional value fermented vegetables based on fruit and vegetables.

The EKOFERM project aims to achieve a deeper understanding of the development of vegetable ferments, as well as fermented beverages such as kombucha.

With this aim, EKOFERM identifies the raw materials and the critical points of the process, carrying out concept tests and product design and promoting a technological characterisation of innovative products.

The development of these products is aimed at supporting small and medium-sized companies in the Catalan agricultural sector, increasing the value and giving way to the production of non-marketable organic crops, either due to surplus production or due to a lack of adequacy to the standards of retail quality.

The products developed will have a high functional value thanks to the high content of bioactive compounds such as organic acids and polyphenols. These products with high added value boost the competitiveness of companies in the sector, in a highly competitive and growing market for organic products.

Eurecat participates in EKOFERM through its Nutrition and Health Unit. The project is coordinated by the Drissa Foundation and has the participation of the Èxit Cluster.
