Embotits Salgot, a company operating in the food industry, and the Eurecat technology centre, a member of Tecnio, will look to develop a functional strategy aimed at improving the nutritional profile of pork-based products (specifically sausages and hamburgers) as part of the global trend towards the consumption of food that offers health-related benefits.
To achieve this aim, the partners have created PIG-MALION, a consortium that will focus on developing innovations to enable the inclusion of sausages and hamburgers in heart-healthy diets, especially for those who habitually consume meat-based products such as these.
“With this aim in mind, Embotits Salgot and Eurecat will look to reformulate pork-based products with a view to the qualitative and quantitative replacement of animal fat, while at the same time adding bioactive ingredients to improve the products’ nutritional profile and make them healthier”, explained Noemí Boqué, a researcher in Eurecat’s Health and Nutrition Unit.
