Intelligent assistance for quality assurance in probiotic manufacturing

The PROBIO-AI project focuses on the nutraceutical manufacturing sector, specifically the production of liquid probiotics at EMLIFE Biotics. This industrial field is characterised by highly complex fermentation processes and strict quality requirements that demand constant supervision by highly skilled operators.

The experiment’s primary goal is to address the fragmentation of operational expertise within the production plant, where currently 20% of processes are digitalised, while 60% remain in manual records, and 20% consist of undocumented tacit knowledge. By applying explainable and governed AI, the project seeks to consolidate this expert knowledge into a structured digital base, making it accessible through a digital intelligent assistant.

This assistant acts as a support tool that guides operators through microbiological and physicochemical tests via reminders of critical steps and a system that ensures full process traceability and reduces the risk of errors or omissions.

Instead of replacing humans, the system empowers them through a human-in-the-loop model. In this regard, the digital agent provides contextual advice, highlights deviations, and suggests improvements, while final decision-making always remains with the operator.

Furthermore, the technology facilitates the onboarding of new employees at the factory by providing step-by-step guidance on laboratory and production protocols, shortening the learning curve and ensuring adherence to food safety standards. It also promotes cross-functional training by supporting logistics and packaging staff in their transition to production-related roles.

This digitalisation preserves critical knowledge that might otherwise be lost. Consequently, the project strengthens operational resilience and transforms manufacturing roles into more attractive, efficient, and secure positions.

Eurecat participates in the project within the DIH4CAT framework through its Technology Consulting unit, which defines the performance indicators and oversees the project’s AI ethics and governance. The consortium also includes Connecthink, responsible for the architecture and explainable AI, and EMLIFE Biotics, providing expert knowledge and its production centre for industrial validation.
